Served with mint chutney, Green Pancakes with Mushroom makes a light but healthy lunch or snack. So, give mushroom, paneer and spinach pancake a whirl!

Instructions

  1. Finely chop the onions. Wash and blanch the spinach leaves and make a puree
  2. Wash mushrooms and chop them finely
  3. Add all the vegetables in the spinach puree; mix them in the jowar atta
  4. Add salt, ajwain, ginger garlic paste and white pepper powder as per taste and make a batter of dosa. Use buttermilk as required to bring in consistency
  5. Keep the batter aside for 10 minutes
  6. Heat a non-stick pan. Add 1 tsp oil and spread the batter over the pan
  7. Cover the pan and cook on medium flame for 5-7 minutes or until it is properly cooked
  8. Add grated paneer on the top. Roll the pancakes and serve hot with mint chutney
