Ingredients
- 1 cup Rice (cooked, cooled)
- 1 cup fresh Curd or Yogurt
- 1/2 cup Cucumber (washed & chopped; unpeeled)
- 1 cup Carrot (grated)
- 1/4 cup Coriander (chopped)
- Salt to taste
For tempering
- 1 tsp Cumin Seeds (jeera)
- 1 Green Chilli (slit)
- 1 tbsp Urad Dal (split black lentils)
- 4-6 Curry leaves
- 1 tbsp Oil
For garnish
- Coriander Leaves (optional)

Instructions
- In a large bowl, combine rice, curd, cucumber, carrot, coriander, rice and salt. Mix well.
- In another pan, heat the oil and add cumin seeds.
- When they crackle, add urad dal, green chillies, curry leaves and sauté for 1 minute.
- Pour the tempering over the rice and mix well.
- Serve chilled, garnished with coriander leaves if you like.
