Ingredients
- 1/2 bunch of Spinach
- 25 gm Paneer (grated)
- 2 tbsp jowar atta
- 1/2 Onion
- 1/2 tsp Ginger-Garlic paste
- 5-6 no of Button Mushrooms
- White Pepper Powder as per taste
- Salt to taste
- 1/4 tsp ajwain seeds
- Thin buttermilk as required

Instructions
- Finely chop the onions. Wash and blanch the spinach leaves and make a puree
- Wash mushrooms and chop them finely
- Add all the vegetables in the spinach puree; mix them in the jowar atta
- Add salt, ajwain, ginger garlic paste and white pepper powder as per taste and make a batter of dosa. Use buttermilk as required to bring in consistency
- Keep the batter aside for 10 minutes
- Heat a non-stick pan. Add 1 tsp oil and spread the batter over the pan
- Cover the pan and cook on medium flame for 5-7 minutes or until it is properly cooked
- Add grated paneer on the top. Roll the pancakes and serve hot with mint chutney
